How are there only three days until Christmas? The holiday season has flown by. I’ve been home for a little over a week now, and it’s been so nice to relax for a bit and spend time with family/my hometown friends. I’ve been working a lot at a local boutique, finishing up my Christmas shopping, working on my online class, and doing lots of baking! Yesterday, our family went to Memphis to see Hamilton at the Orpheum- it was so good! I was curious how it would compare to the original, since it’s a whole new cast. It was really similar, but each character put their own twist on their lines, which was cool. It was such a fun Christmas outing. With Christmas coming up so soon, we’ve finally started planning the Christmas brunch menu. Every Christmas morning, my grandmother, uncle, and cousin come over and we all have a huge brunch, then open presents. We have a few items that we have every year, like monkey bread, but we’re trying a few new recipes this year too!

current cookbook: fall recipes to try!
Something about the weather cooling down and it getting colder just makes me want to bake and try new recipes. I like cooking and being in the kitchen in general, but I absolutely love the feeling of baking cozy fall recipes and cooking with friends or family on a cold day. I think a lot of fall recipes are geared towards all things pumpkin and apple, which I love, but I also love making cookies, soups, pasta recipes, and using fresh vegetables for harvest salads and things like that. Recent Eats + Meals I Want to Try!
While it is a little weird living at home again, I definitely love being back with family and having my regular kitchen to cook more and make my own meals again. I love trying new recipes and yummy meals, which was definitely difficult in my dorm microwave or tiny dorm kitchen. Now that we’re in quarantine, we’ve kind of gotten into a weekly rotation of family meals and recipes, and it’s been so nice to have my mom cook for me again! I’ve also been helping with dinners and planning the meals every once in a while, and I love getting recipe recommendations. Today I’m sharing some recent quarantine eats + recipes on my to-try list!
Healthy College Grocery List + Easy Meal Ideas
Now that I’ve been at college for a few months now, I’ve started to get into a routine and carve out times for cooking in my dorm. It’s not exactly meal prep, but it’s always nice to have food on hand for whenever I want to heat it up or refrigerate it for later. There are three dining halls on campus that I rotate between, but they don’t always have the best options, and sometimes I don’t feel like leaving the dorm. We have a microwave and full fridge in our dorm, and then down the hall is a kitchen with a stove/oven. It definitely takes a little extra effort, but eating healthy as a college student doesn’t have to be that hard!

Recently I’ve been so into looking at food blogs and instagrams to find lots of inspiration for recipes to try. I love finding new meal and snack ideas to add to my regular rotation. I eat a lot of the same meals because I love them and know I’m going to enjoy them, but I definitely want to branch out with my meal options and try new combos!
Oatmeal Recipes I Want to Try
Recently I’ve been really into oatmeal as a quick before-school breakfast. I really want to take pics and share my usual oatmeal recipe, so hopefully soon that post will be up! I’ve always made the same type of oatmeal every morning, so I want to branch out and try some new recipes! Even though it’s technically fall, here in Mississippi it doesn’t always feel like it. Sure, there are some days where it’s chilly and I end up grabbing a sweater, but other times it doesn’t feel much different from summer. I always love making a steaming mug of hot cocoa and warming up with it on a chilly day, but with this hotter weather, there’s no point! That’s why I’ve been loving frozen hot chocolate- you still get the delicious hot cocoa taste, but with the consistency of a milkshake! The Benefits of Lemon Water
Hello everyone! Today’s post is about one of my new finds: lemon water. Of course I’ve heard of it before, but I never really drank it until just recently. I really want to make a habit of drinking it every morning to start my day. I’ve heard that it’s really beneficial and has so many rejuvenating qualities! One of my main things I want to start doing is having a cup of lemon water by my bed or in my bathroom. That way, when I wake up in the morning, I can go ahead and start my day with a fresh cup of it! Recently, I’ve been really loving avocados and I’ve been coming up with some great recipes incorporating them. Avocados are really healthy for you and they provide so many health benefits for you body and skin. A few of my favorite ways to use them: crush into guacamole with multigrain chips, slice like apple slices and eat plain, or put it on toast! Mini Cupcake Recipe
Hello everyone! Hope you’re having a happy hump day. We’re halfway through the school week! Yesterday I decided to make some cupcakes for my friend’s birthday. But I didn’t want to make a whole batch of 24 cupcakes, just one or two of them. So I tried out this recipe for single serving cupcakes. I had planned to follow the recipe and make two regular sized cupcakes, but something came up. I couldn’t use the regular muffin pan like I had planned. I should have checked before I made up the batter, but I already had everything ready to cook. So instead I found our mini muffin pan and decided to use that. And they actually turned out great! The batter makes about 5 or 6 mini cupcakes, and they turned out great!
Snack Option: Toasted Coconut
I’ve found out recently that I actually do like certain types of coconut. I don’t like it on cakes or shredded, but toasted coconut is so so good! The best brand to buy is Dang. I think it tastes amazing. This snack is healthy and coconut is beneficial for you, but it also tastes surprisingly good! I think it’s also not too messy and you can carry around the little package of toasted coconut in your lunchbox or purse or whenever you’re on the go. You can buy already toasted-coconut, but you can also make your own! There are so many recipes and ways to make this easy snack. I can’t wait to try making it on my own!

Easy Breakfast- Blueberry Mug Cake
Sometimes in the morning I get so rushed and I don’t have enough time to make a nice fancy breakfast. Even eggs take too much time if I’m in a big rush. Something I’ve recently found to be a quick and easy breakfast meal is a breakfast mug cake. It’s really simple, just mix your ingredients and pop it in the microwave for a couple of minutes. I’ve seen a lot of different recipes for mug cakes, but I’ve only tried the blueberry kind. I found this recipe from Pinterest and have been using it ever since!
